主料:花甲1斤、两勺料酒、一勺蚝油、一勺生抽、一勺糖。
1、买回来的花甲,加一勺盐,几滴油浸泡片刻,然后大力搓洗,边洗边冲,洗去表面的附着物。

2、烧一锅清水,将花甲倒进锅内。花甲煮至开口后要立刻捞出,然后用清水冲洗干净,这样可以使花甲肉更加爽脆,沥干水份备用。煮花甲的时间不宜太久,开口就要取出,因为还要回锅炒,否则会煮太老。
