如果翻成第二句的话英文最好是“We've already been here for a day.

不可以去掉，so far away 是固定的短语，是很遥远，如此遥远的意思。
如果去掉这句子就不对了，so far 是迄今为止，到目前为止的意思，如果一定要去掉那么就可以说成：The office seems so far that we don't want to go to there
意思是，办公室看起来很遥远以至于我们都不想去那。
