怎么用高压锅炖鸡汤的做法

1、首先锅中加入适量清水,将砍好的鸡肉块放入,水要没过鸡肉,大火煮滚后马上捞出鸡肉洗净(一定要冷水下锅,这样炖好后汤面上才不会有讨厌的血污);

2、将清洗过的鸡肉放入高压锅中,加入厚姜片,小葱2根,加入一汤匙料酒(最好用绍兴黄酒),放入清洗好的枸杞、党参、当归(少放,一小片即可)、红枣(4、5粒即可,多放汤会有酸味)、桂圆肉3粒,如怕上火,可去掉当归,加5克玉竹、苡米,少加一点盐(使鸡肉入味),加水没过鸡肉一寸左右,盖上锅盖和阀,放在炉子上大火煮开;

3、高压锅喷汽后改中火压5分钟,再改小火压10分钟(可保持汤是清汤,不会浑浊),关火等待高压锅气压降低;

4、放汽打开锅盖后,捡出姜葱,加入适量的盐和鸡精调味(依个人喜好),一锅香喷喷的鸡汤就做好了,喝去吧!

5、如果是用普通汤锅炖的话,水要多加些,不可中途添水,否则汤就不醇香了;大火炖10分钟,然后小火炖1个小时(嫩鸡,如炖老母鸡时间要延长一倍),调味即可;

6、还可以用有盖的陶瓷容器隔水炖(这种炖法味道最醇,是粤菜常用的炖法),将加好料的容器盖盖放入蒸锅中,有条件的可用纱纸湿水封在容器上(要先调好味道),大火蒸2个小时左右即成;

7、如果使用汽锅炖,则不用放水,靠蒸汽凝结成汤水,味道很是浓香醇厚,炖法和隔水炖相类似;

8、无论使用何种炖法,最好将鸡油清除再炖,以免太油腻。
